Ingredients
- 2 salmon fillets
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- Salt and pepper to taste
- 8 oz penne pasta
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- Fresh basil for garnish
Preparation
- Preheat oven to 375°F (190°C). Season salmon fillets with olive oil, Italian seasoning, salt, and pepper.
- Place on a baking sheet and bake for 12-15 minutes, or until cooked through.
- While the salmon bakes, cook the penne pasta according to package instructions. Drain and set aside.
- In a large pan, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Stir in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until the sauce thickens.
- Mix in sun-dried tomatoes and cooked penne. Toss to coat the pasta in the creamy sauce.
- Serve the creamy Alfredo penne topped with the baked salmon fillets and garnish with fresh basil. Enjoy!
